As working farmers from the Borders, Adam Marshall and Sandy Pate had the simple yet brilliant idea of bringing their quality natural product from the farm to the city. Passionate about good honest food they wanted to introduce a very different food concept to Edinburgh with their fresh and delicious Scottish hog roast rolls using pork reared on Adam’s pig farm.
Coming from families who have farmed in Berwickshire for many generations they certainly know a thing or two about good meat. They began by specialising in hog roasts and brought their freshly carved hog roasts to the Edinburgh Farmers Market at Castle Terrace back in 2001. In fact they are the only business who has attended every single Saturday Farmers Market to feed hungry regulars with hog roast and their own bacon. Their delicious hog roast rolls (pulled pork as some of you know it) were such a runaway success with the public that they decided to open their first shop in Edinburgh – and that’s when Oink was born.
Already well known at Edinburgh Farmers Market, the company needed help to launch their new food concept in the Capital and tell their unique story to both the press and the public. A quirky new brand identity was developed and a highly successful launch event, press and PR campaign and marketing campaign ensured that Oink got the attention they fully deserved and the company have gone from strength to strength. Oink was launched in Edinburgh’s Victoria street in summer 2008 and they have been serving delicious hog roast rolls to hungry workers, locals, students, festival goers, shoppers and tourists 7 days a week ever since! They opened their second shop in the summer of 2013 in the Canongate area of Edinburgh’s historic Royal Mile. The team also operates their highly successful Oink mobile catering service for both hog and lamb roasts and regularly caters for weddings, birthdays and other special occasions as well as every kind of corporate event.
Bright Light Marketing continue to market Oink and are proud to say that the business was recognised as one of the top 100 restaurants in the whole of UK last year by Yelp. Oink has thousands of loyal customers who follow them on social media every day encouraging them to return to Oink in Edinburgh time after time.
